Tahchin ( Rice Cake )
The recipe:
First, rinse the rice with warm water, then cook in boiling water till it is soft-textured and rinse.
Add an egg yolk, yogurt, salt and pepper, oil and saffron water to a bowl and mix well.
Spread oil all around a pot and then add rice. Pour a layer of the mixture on the rice. Add salt, pepper, and slices of chicken. Add cream yogurt (if desired).
Place layers of rice, the mixture (yogurt sauce) and chicken pieces one by one. In the end, pour some chicken water on top. Put a lid on the pot and put it on a very gentle heat till it is steam cooked.
